Gluten-Free Molasses Crinkles

Ingredients

  • ¾ cup shortening
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • 315 grams gluten-free flour blend (1 to 1 that includes xanthan gum)
  • 2 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground cloves

Instructions

  • Beat the shortening and brown sugar together until blended.
  • Add egg and beat until blended.
  • Add molasses and beat until blended.
  • In a separate bowl, add all dry ingredients together and stir with whisk.
  • Then add dry ingredients to mixing bowl containing wet ingredients.  Beat until blended.
  • Place in refrigerator for 15-30 minutes.
  • Using spoon or cookie batter spoon, scoop and roll into balls.  Then roll balls into sugar prior to baking. Preheat oven to 350°F and bake for 9-10 for softer cookies or longer if crisper cookies are desired.
