315gramsgluten-free flour blend(1 to 1 that includes xanthan gum)
2tspbaking soda
¼tspsalt
1tspcinnamon
1tspground ginger
¼tspground cloves
Instructions
Beat the shortening and brown sugar together until blended.
Add egg and beat until blended.
Add molasses and beat until blended.
In a separate bowl, add all dry ingredients together and stir with whisk.
Then add dry ingredients to mixing bowl containing wet ingredients. Beat until blended.
Place in refrigerator for 15-30 minutes.
Using spoon or cookie batter spoon, scoop and roll into balls. Then roll balls into sugar prior to baking. Preheat oven to 350°F and bake for 9-10 for softer cookies or longer if crisper cookies are desired.
