Gluten-Free Cornbread

Ingredients

  • 1 cup cornmeal gluten free
  • 1 cup gluten-free flour (1 to 1 blend that includes xanthan gum)
  • 3 ¼ tsps baking powder
  • cup white sugar
  • ¾ tsp salt
  • 1 ⅛ cup milk
  • cup oil
  • 1 egg

Instructions

  • Blend all dry ingredients together in a medium bowl.
  • Add milk, oil, and egg.
  • Mix until combined.
  • Preheat oven to 400°F.
  • Grease 8 inch square baking dish.
  • Add batter to dish and bake for about 20 minutes or until toothpick comes out clean.

Notes

Be sure all ingredients are gluten free, particularly cornmeal!
