Gluten-Free Cornbread
Ingredients
- 1 cup cornmeal gluten free
- 1 cup gluten-free flour (1 to 1 blend that includes xanthan gum)
- 3 ¼ tsps baking powder
- ⅓ cup white sugar
- ¾ tsp salt
- 1 ⅛ cup milk
- ⅓ cup oil
- 1 egg
Instructions
- Blend all dry ingredients together in a medium bowl.
- Add milk, oil, and egg.
- Mix until combined.
- Preheat oven to 400°F.
- Grease 8 inch square baking dish.
- Add batter to dish and bake for about 20 minutes or until toothpick comes out clean.
Notes
Be sure all ingredients are gluten free, particularly cornmeal!
