I read a note from someone with celiac disease that said, “I cannot eat a chocolate cake, and I really want a chocolate cake.” I responded and asked, “Why can’t you eat a chocolate cake? If you want a chocolate cake go buy yourself a gluten-free chocolate cake or make a gluten-free chocolate cake.” Sometimes we are held back by a limiting belief, and it’s a matter of shifting our thoughts from I CAN’T have it to I CAN have ______ (you fill in the blank). It’s a matter of replacing your gluten items with gluten-free versions of those items.
