realized that I had eaten some foods around Thanksgiving that weren’t labeled as gluten free and didn’t have gluten listed as an ingredient. I paid the price..nausea, belly pain..ugh! We can have multiple symptoms when eating gluten or even when we “think” we are eating gluten-free foods. These symptoms range from bloating, diarrhea, migraines, fatigue to heartburn or dermatitis herpetiformis, It can feel frustrating to continue to have these symptoms when on a gluten-free diet. Some people give up and go back to eating gluten. They think why bother eating gluten free when they continue to have symptoms. Here are two things people don’t realize:
It may take a bit of time for our bodies to heal once we are on strict gluten-free diet,
AND
In order for our bodies to heal, we have to have a very clean/strict gluten-free diet.
If you want to reduce the symptoms and feel better, do the following:
a. STOP eating gluten—I know this seems obvious, but if you are serious about reducing your symptoms such as bloating, dermatitis herpetiformis and want to feel well again, do not eat gluten!
b. eat only those foods labeled as gluten free, no gluten, or certified gluten free (fresh fruits and vegetables, milk, and raw meats won’t necessarily be labeled as gluten free but are naturally gluten free so you can choose from these foods without worry)
